What We Ate
Spanakopita Bites
For the filling:
- 16 oz frozen chopped spinach, thawed and well-drained
- 2 bunches flat-leaf parsley, stems trimmed, finely chopped
- 1 large yellow onion, finely chopped
- 2 garlic cloves, minced
- 4 eggs
- 10.5 oz quality feta cheese, crumbled
- 2 tsp dried dill weed
- Freshly-ground black pepper
Squeeze all liquid out of the spinach and mix all ingredients together
- Layer individual layers into a mini muffin pan, layering each layer with melted butter
- Repeat this 5 times
- Add a spoonful of the spinach and feta mixture
- Repeat the first step to layer 5 layers onto and press to seal
- Bake at 350 for 12 mins or until golden brown
What We Drank
Metaxa Ginger Mule
- 50 ml Metaxa
- Fever Tree Ginger Ale
- Lime wedges
- Cucumber
INSTRUCTIONS
- Add three or four ice cubes into a rocks glass
- Pour 50ml of Metaxa and top with chilled ginger ale.
- Garnish with a roll of fresh cucumber and a lime zest.
